If a guest wants 1 Waterpark day in addition to X themepark days, can I add a separate ticket or do I have to change all days to park hoppers?

You can do either, but be sure to check and see which is the best option, price-wise, for the guest. Check by clicking on the dropdown under “Destination & Ticket Options” and choose “Walt Disney World Resort Tickets only”
